A. You want carne asada- take a roast and have them slice it 1/4 inch. Here it is about 3 bucks a pound. Take it home, squeeze fresh lime all over it, salt and garlic powder it, and let it sit for at least 1 hour, the longer the better. After you BBQ the meat, put some trimmed green onions on the grill, they are awesome with a piece of meat, and onion, and a tortilla all wrapped up together.

Barbecue for a large group - when do you start grilling?
Q. I have a barbecue that starts at 1 pm. There will be 60 or so people to feed. The bulk will arrive between 1:30 and 2:30 pm. When should I start grilling the burgers, franks, etc.? Should I grill as people arrive? Should I pre-cook any of the burgers?

Q. There is a barbecue restaurant in Las Vegas, Nevada, that I used to frequent when I lived there more than thirty-five years ago. No matter how many times I have tried to make a similar - tasting sauce (from memory) I have yet to get near what it tasted like. Yet the memory of it makes my mouth water; and I am ready to try again. Any ideas from lovers of hot barbecued ham sandwiches? You could make my day. I have lived in London for twenty plus years, do not get back to the states very often. Probably the place is a casino now.

Ingredients: 4 sandwich buns 1 cup ketchup 2 tablespoons brown sugar 2 tablespoons steak sauce 1/2 teaspoon salt 1/2 teaspoon dry mustard 16 ounces very thinly sliced cooked roast beef preparation: Toast buns if desired. In saucepan, stir together ketchup, brown sugar, steak sauce, salt, and mustard; add beef. Cover and simmer 10 to 15 minutes. Spoon onto buns. Makes 4 barbecued roast beef sandwich servings. Is it safe to paint a barbecue grill?
Q. I have a barbecue grill that was recently re-painted by someone. Now thinking about it, I wonder if this is actually safe to do. Will chemicals from the paint affect the food? The inside of the lid was painted also? It was Rustoleum paint. Label says safe up to 1,000 degrees F.

A. They make high heat spray paint that is safe to use on the outside of the grill and should last a couple of years. However the inside of the lid should not have been painted.

A. We are chicken lovin' people. Bbq chicken is my husbands favorite dish. I think that with the correct seasoning it doesn't matter what you do afterward or the Bbq sauce that you use (as long as it's somewhat decent). The day before take all your meat out and let it defrost. Then season it well with about 3 tbsp. adobo, 1 fresh sliced onion, a few cloves of garlic, a few tbsp. of Frank's hot sauce, and about 2 tbsp. of vinegar. Let this marinate overnight in a tightly sealed ziplock bag. Make sure there is very little air in the bag keeping the moisture in the meat. When you are about to cook the chicken fry it in olive oil on a high heat until all sides are brown, then pop in a low oven, 300 for 1 1/2 hours. Then baste with your… [cont.]

A. When we fill cylinders, we only fill them to roughly 80% of their actual volume. This is to allow the propane to "grow" if the temperature goes up. This is usually plenty enough of a safety margin. The only time it can be a problem is if you get a cylinder filled on a very cold day in the spring and it doesn't get used until the warmer weather arrives. When we fill home heating tanks in the spring we typically only put in about 70% just to leave a bit more of a margin... A. I created a recipe of my own for bbq chicken. It makes the meat so tender and juicy. It is used as a marinate, but it might work for your sandwich as well. Equal parts of worchestershire for chicken, balsamic vinegar and any type of bbq sauce. If you like onions, put about 1 to 2 T of onion powder into the mix as well. Good luck!

A. Here in Texas I've tried 'em all! It's hard for me to pick one. Kraft has a bunch of varieties of which Brown Sugar/Honey and Mesquite w/onions are yummy. Recently, I've been buying Sweet Baby Rays w/honey. I can drink that stuff...really! In my opinion, the sweeter BBQ sauce is good for chopped beef. You can always make two different flavor batches if your indecisive. Good Luck!

Can I use pine lumber for my charcoal barbecue?
Q. Hi... I have a charcoal barbecue in which use the standard Kingsford or Matchlight barbecue charcoal. My son is getting ready for his Karate Black Belt and is breaking wooden boards. These are cut from a 12" wide and 10 foot long piece of No.2 Pine unfinished wood from Home Depot. Can I use the broken pieces in my barbecue if I chop it down to smaller pieces.
